Research

I am a plant biochemist with a special interest in protein and phenol chemistry. My more recent work has focussed on the enzyme polyphenol oxidase in forage crops looking at gene expression, enzyme biochemistry and phenol substrate chemistry. I am currently studying the effects of post-harvest changes on proscessing of crops for biofuel.
